🍷 Vinificatie & Rijping

Na handmatige oogst in oktober worden de druiven geselecteerd en gefermenteerd met lang contact met de schillen. De wijn ondergaat malolactische gisting en ± 30 maanden rijping op hout, met de eerste maanden op fijne droesem voor extra complexiteit. De flessen rijpen daarna nog minimaal 6 maanden voor release.
